“If you're working with fresh broccoli heads, it's best to store them in a crisper drawer unwashed until you're ready to use them, washing broccoli before storage can cause bacteria to form and ultimately cause broccoli heads to rot.”

She explained that if you don’t have a crisper bag, you can mist the unwashed broccoli head and wrap it loosely with dampened paper towels before storing it in a reusable mesh bag or a perforated plastic bag.

If she wants to prep her broccoli and store them as florets, she starts by thoroughly cleaning her broccoli.

“When I'm ready to prep my broccoli, I first give it a saltwater bath to remove dirt, or any worms or bugs that might be present. From there, It's just a matter of cutting the floret stems.

“Once my broccoli florets are prepped, I add them to my salad spinner in preparation for another soak.

“For this soak, I add vinegar to my water just to ensure the florets are nice and clean.”

After the final rise, she dries them, stores them in a storage container lined with damped paper towels, and seals the container before storing it in the crisper part of her fridge.
