Prawn fried rice

PRAWNS are a good source of protein and minerals, are very low in fat and calories (which makes them a healthy choice) and they taste great in this delicious rice dish.

INGREDIENTS

Serves 4

2 tablespoons sunflower oil

2 small carrots, finely diced

75g frozen peas

200g frozen prawns, defrosted

400g long grain rice, cooked

2 eggs, beaten

1 tablespoon soy sauce

4 spring onions, sliced

METHOD

Heat the oil in a wok or large frying pan and fry the carrots for 3-4 minutes until just golden and tender.

Add the peas and prawns and fry for 1 minute then add the rice and stir-fry until hot.

Make a well in the centre of the rice, add the eggs and stir over the heat until just scrambled.
