TV CHEF MARCO: TO HELL WITH SALT

SPICY: Marco Pierre White

Sunday May 17,2009

By Lucy Johnston

CELEBRITY chef Marco Pierre White has turned his attention to the nation’s health.

The star of TV’s Hell’s Kitchen launches a campaign today urging people to look after their hearts by eating less salt.

White, the first British-born chef to be awarded three Michelin stars, says he suffered from high blood pressure during his twenties and was warned by doctors that his health was at risk.

Shunning the drugs he was offered he instead cut down on salt and the problem resolved itself.

He is targeting parents to teach their children to eat less salt.

“An individual’s palette is normally established during childhood and by the time we become an adult we have already acquired a strong taste for salt, which can result in us eating more than we need,” he said.

“I grew up on a northern council estate and was brought up on fish and chips and dripping. Then when I was a chef I was forever seasoning and tasting. It’s a habit in cooking.

“Doctors were worried about my blood pressure as my heart was at risk, but since I cut salt out of my diet my blood pressure dropped.” T

he colourful chef, known for his verbal assaults on staff, said the Government should take responsibility to educate the public.

“We know salt is a killer. People suffer strokes and heart attacks as a result of too much salt.

“I don’t think the Government has made people aware. It has a responsibility to inform the public. Salty foods like crisps should carry a warning.

“We can all take simple steps to reduce the level of salt in our diets such as avoiding processed, pre-packaged foods and using citrus fruit, herbs and spices instead of salt to enhance flavour.”

Professor Graham Macgregor, heart specialist at St George’s Hospital Medical School in London, said: “Marco Pierre White is absolutely right. Salt is a long-term toxin. We have to get salt intake down.”

Research shows halving daily salt intake could save around 2.5million lives a year worldwide.
