EASY LIDL PIZZASWednesday May 2,2007 To make these pizzas you will need a 6cm diameter cutter, rolling pin and a non-stick baking sheet. Serves 4 (makes 16 mini pizzas) INGREDIENTS:
For the tomato sauce: 1 tablespoon extra virgin olive oil 1/2 small onion, finely chopped 1 clove garlic, crushed 1/2 tin of chopped tomatoes 1/2 teaspoon basil Pinch of sugar Salt and ground black pepper For the Grilled red pepper, chorizo and mozzarella topping: Chorizo Grilled red pepper Grated mozzarella cheese For the Cherry tomato, mozzarella and pesto topping: Cherry tomatoes Pesto sauce Grated mozzarella cheese For the base: 225g self-raising flour Salt and ground black pepper 1/2 teaspoon herbs de provence 1/2 teaspoon chilli powder 30ml extra virgin olive oil 100ml milk METHOD 1) To make the tomato sauce, heat the olive oil in a frying pan, add the onion and garlic and cook for 2-3 minutes until soft. Add the tomatoes and basil, sugar and season with salt and pepper. Continue to cook over a medium heat (225C/205C fan/gas 7) for 5 or 6 minutes until the sauce has reduced. Set aside. If you do not wish to make your own tomato sauce, try Lidl’s Tomato Napoli pasta sauce instead. 2) For the pizza base, sift the flour, salt, pepper, chilli on to a large chopping board or clean work surface and add the herbs. Make a well in the centre and pour in the olive oil and milk and mix to a soft dough - it should not be too sticky. 3) When the mixture is completely combined, place it on to a lightly floured surface. Use a rolling pin gently to roll out to approx 5mm thick. Cut the pizza bases with a cutter and using a palette knife, place on to a non-stick baking sheet. 4) Spoon a teaspoon of the tomato sauce on top, then choose a topping. Layer each ingredient on top of the sauce, finish off with small amounts of cheese and bake in a hot oven for 10 minutes. Serve warm with a glass of red wine, such as Lidl’s delicious South African Cabernet Sauvignon. |
